You will not be able to get super accurate terrain data for a long thin linear mission with most softwares (including Maps Made Easy).
It is not uncommon for elevations to change slowly over long distances like that and it can really add up. If you fly at 60m above takeoff and fly 5km away there is little chance the elevation will be the same height and the aircraft will be further from or closer to the ground. This will affect the consistency of the overlap you get and likely cause issues. Using Terrain Awareness would address this issue.
