Your map is still processing. If you have a ton of overlap or the survey area was really feature rich there are certain parts of the processing that can take a pretty long time. The ETA is an estimated time of arrival for jobs of a similar size based on historical data. If you used >85% overlap or have a lot of trees it will take extra time.
There is such a thing as too much overlap. Remember that 75% overlap corresponds to the system getting 16 looks at everything. 80% gives 25 looks. 85% gives 49. 90% gives 100... Given the big jump between 80 and 85% we generally recommend using 82-83 for important stuff since that is plenty for everything except trees.
