The "Stop" button is to stop the mission's flight when you have the intent to restart it. It is a stop flying button.
To take over manually you need to switch the aircraft out of the programmed flight mode. Togging in and out of sport mode using the switch on the remote is usually the best way to do this.

I thought that by pressing the STOP button, my drone would be able to take control to land manually.
What exactly should I do if I want to take control when my drone is descending?
If the aircraft is already descending it is in the landing state and can't really be interrupted since sometimes the aircraft considers it a safety emergency to get down quickly depending on battery state. You can usually make fine adjustments with the sticks. You might be able to hold down the RTH button to cancel it but again, that might not work depending on the state of things. This is all controlled by the DJI firmware and not Map Pilot Pro at that point.
