We have users that collect data at 10m (sometimes less) and process it. The output is .2 mm / pixel. We process as close to the source GSD as possible.
I have a job which is all about providing an ortho with as good a resolution as possible while gathering images at low altitude for the same reason.
Is it possible to process an ortho to the same resolution as the original images? If not, what is achievable / what are the limits?

.2mm/pixel would be very nice. I recently processed images from a flight at 20m agl and the output referred to "Output size 13628 x 18531@ 0.5 cm/pixel". Is this where I find the resolution for that job?
That number is the final output GSD of the created orthophoto.
