With the Mavic 2 Zoom set to the narrowest field of view setting you are going to run up against the two physical limits: camera frame rate and aircraft minimum speed. The camera can only take 1 picture every 2-2.5 seconds and the aircraft can only fly as slow as 2 m/s. If you want to fly lower you will either have to use a lesser along track overlap value or use a wider field of view setting for the camera.
You can't fly fast, get a ton of overlap, and be zoomed in all the way. The frame rate and the minimum speed make it so you have to adjust the other to accommodate these limitations.
