Is there a way for me to delete conveyor-related points that are above a stockpile for which I need to calculate volume?
This is not something that is possible with our system. You are more than welcome to download the 3D model or DEM and do whatever secondary operations you would like to clean up your stock piles before taking your measurements manually.
Ian's method would also likely work.

I have a similar problem. In my case small trees are growing out of the dumps. The only thing I can think of is to draw a perimeter around the dump then draw a perimeter around the tree(s) and subtract the second volume from the first. More problematic when you have infrastructure such as conveyors in top.
