Is there a way to define the projection so that my georeferenced orthomosaic is ready to go in ArcMap? I'm having trouble getting the images to project properly once in ArcMap. (The define projection tool is not working for me...)
We have a lot of customers that are using ArcMap so it is certainly possible.
This is the output from GDAL with respect to the projection that is used.

In ArcCatalog you have select your raster then right click - go to Raster Dataset Proprieties and than click Edit. In next window enter 4326 value (it is EPSG code for WGS84) and Enter. Then choose WGS 1984 from the list and click OK on both windows.
When you do this you can open your raster in ArcMap. Afterwards if you want to change projection you simply go to Layer properties in Table of Content and from the coordinate System tab choose this projection you are interested on - in my example it is Polish ETRS 1989. The raster will be re-projected on the fly.
If you want to keep projection click for the future right click on the raster - data - export data - and in Export Raster Data window select Spatial Reference - Data Frame Current.
