Yes. Maps Made Easy's processing will choose the most appropriate image to texture the model's faces. If there is an image that is closer or more orthogonal to a vertical face it is the one that will be used. It can take some experimentation to make sure you are getting the right amount of overlap for non-horizontal surfaces.
Just be sure that you are not including any shots of the sky or horizon. That is the best way to get a job to fail.
