Can I upload images from two different flight plans to create just one map? (With the same camera settings).
Will it work if in one of the plans the drone takes the pictures on the East-West axis, and in the other plan it flies in the North-South axis?

Will it matter if the take-off points are from different locations and altitude?
Mixing altitudes may lead to some funkiness but it is not forbidden.
Can you give me an idea of "plenty of overlap" in feet when joining two flight missions? Should the two areas have overlap each of 10, 20, or 30 feet ?
Also to make sure i have good coverage on the sides of what I am mapping how many feet should I go beyond what I accually want?

I would make sure that a full pass lined up with the adjacent layout to make sure there aren't any issues. If the lighting was slightly different (it will be) having a lot of overlap will help make sure it matches up.
Make sure everything you want to cover is inside the polygon. The area outside of it will show up but won't have enough overlap to be sure it will turn out well. We trim off most of the junk.
