Same direction grids?

Our Urban architects want to make a grid or line of photos taken from the same direction.But in various gimbal angles
The idea is to combine the captured images into one for multiple purposes: evaluation, detailing or PR.
 
But we need to be able to capture the same area over and over again. And the grid based capture that Maps Made Easy gives me as options, the capture is in the direction of the flight?
Can that be changed in the mission parameters?

The capture is always in the direction of the flight since the rolling shutter of the camera causes problems during processing if you mix directions. 

If you use a full grid mission, tip the gimbal up a bit and use 75% overlap you should have plenty of perspectives that can be done repeatedly.
