The produced DEM when creating a map

How are the DEM files created? Are they made using data collected by the drone i.e. the images or is the data collected from an external source to create the DEM of the site like google maps? It would also be good to know how accurate this process is to assess whether I can use this professionally.

Yes, the DEM is created using the images as is the photo map layer, the point cloud and the 3D model.

As long as you use 80% overlap to collect your imagery and follow the Data Collection guidelines the results should turn out within a few GSD units.

Lots of people use this data professionally.
