Selecting manual focus in Map Pilot business appears to do nothing? Upon closing the app and checking in DJI Go4, the focus is set to auto and all other camera settings are consistent to what was requested in Map Pilot.
Select manual in DJI Go4, force close the app, load Map Pilot business, fly mission, force close MP, check in DJI Go4..... auto focus again....
Is there a work around for this? Am I missing something?

Map Pilot Business does not offer the ability to manually focus the camera. Map Pilot Pro does if you have a Pro-level subscription.
There is no way to force it in Map Pilot Business since it always defaults to using autofocus. You can switch it to Infinity focus from there but not manual.

Apologies, I meant manual focus as in the ability to manually select infinity and have it not change throughout the mission back to auto, which it appears to be doing.
Map Pilot Business always defaults to Auto Focus so if you want to switch to infinity you will have to do that on every flight.
Map Pilot Pro, which you should be switching over to eventually does this same thing with the Free and Base tiers but with the Pro tier the focus is not touched so it can be set up in different apps if required.
At which stage of the flight should I be selecting infinity focus? I've always selected infinity in camera control along with specifying white balance & shutter priority before uploading the flight plan inside the app. It says the focus is infinity on the display throughout the mission but checking in DJI Go4 after the mission has finished, the focus is on auto. Previously, it would be on MF infinity, as selected in Map Pilot. Camera mode, Shutter & WB are as set in Map Pilot.
I think that needs to be set after you are in the air. This has all been reworked in Map Pilot Pro.
