They drop where they are shown, not where your finger is. This is to facilitate more precise dropping of the point where you can see it, not under your finger.
If this is not enough you can design the Boundary on the Maps Made Easy site and sync it to the app.

I can place the points just fine, but after placing 3 points it tells me to click on a small node to add a control node, then tap and hold to then drag the new node around to alter the shape of the polygon.
When I tap and hold on a node it shifts up away from my thumb, prefenting me from dragging the node around.
I tried making a new mission plan on the desktop site, but couldn't figure out how to sync the mission to the app, it says there's nothing to sync and the terminology used on the desktop site isn't the same as the app, so I don't intuitively know how to navigate figuring that out.
To make it more clear, I think I am encountering a bug.
