The DEM is a 32-bit float images which means that every pixel in it has a number that represents the elevation in meters. Areas where there is no information are set to a NODATA value of -32737. The outputs you seek can be generated using QGIS (free) or a number of other GIS applications. We offer a colorized version of the DEM that makes it easier for a human to read. The native 32-bit DEM is more for computers to deal with since it is so much data.
